Mary G. Enig, PhD

Mary G. Enig, PhD, who for many years has researched fats and oils at the University of Maryland, spoke to NOHA on March 26th, 1992. She advised us to avoid the hydrogenated fats that have proliferated in our processed foods. Stay with the simple foods that our ancestors have thrived on.

Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats is a fascinating book that addresses the differences between past and modern diets. The principal author is Sally Fallon, MA, along with Pat Connolly, and Mary Enig, PhD. In past societies, eating habits were vastly different from our modern diets in industrialized countries with our concentration now on: huge quantities of refined sugar and flour; processed meat from obese animals; and pesticided, processed fruits and vegetables.
