EDIBLE WEEDS AND FLOWERS

 

The NOHA outing at the Ulick’s organic farm was a great success, enjoyed by all who came. Besides tasting delicious vegetables and herbs, the group learned about edible weeds! Many of these are more nutritious than their cultivated relatives. Some examples are:

 
  • Lamb’s quarters from the spinach family
  • Purslane with its juicy, crisp stems from the same family as New Zealand spinach
  • Pigweed which is the beautiful amaranth with rosy stems in its green leaves
 
 

The tour also included a variety of flowers, such as tiny blue borage blossoms (like little five-pointed stars) and bright nasturtium blossoms. Both of these are bought for high prices by gourmet restaurants in the Chicago area.
