ARE WE ACTUALLY IMPROVING OUR EATING HABITS?

Those of us who are educating ourselves through reading, lectures, classes, etc. have probably made great strides. According to the US Department of Agriculture, some food companies and independent market research organizations, eating habits of Americans over the last 20 years have changed little despite a serious interest in nutrition during the last decade. All of this and more is reported in "What Americans Eat Hasn’t Changed Much Despite Health Image," Wall Street Journal, September 12, 1985. Since there is no federal data on what foods people actually consume, nutritionists have to rely on the Agriculture Department’s estimates of how much food is available as a basis.
